Easy Peasy Elotes
Ingredients
- 60g frozen sweet corn kernels
- 1 tablespoon Charred Tomato Chipotle Butter
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh coriander (cilantro), chopped
- Salt to taste
Method
- Heat a skillet or grill pan over medium-high heat.
- Place corn kernels in the hot pan. Cook, stirring occasionally, until charred to your liking, about 5 minutes. If using a torch, carefully char the corn kernels.
- Once charred, remove the corn from heat.
- In a bowl, toss the hot corn kernels with 1 tablespoon of butter until the butter is melted and corn is evenly coated.
- Sprinkle the crumbled feta cheese over the corn.
- Garnish with freshly chopped coriander.
- Serve immediately while still warm.
Note: You can add a pinch of smoked paprika for extra smoky flavor if desired.
