Easy Peasy Elotes

Ingredients 

  • 60g frozen sweet corn kernels
  • 1 tablespoon Charred Tomato Chipotle Butter
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon fresh coriander (cilantro), chopped
  • Salt to taste

Method

  1. Heat a skillet or grill pan over medium-high heat.
  2. Place corn kernels in the hot pan. Cook, stirring occasionally, until charred to your liking, about 5 minutes. If using a torch, carefully char the corn kernels.
  3. Once charred, remove the corn from heat.
  4. In a bowl, toss the hot corn kernels with 1 tablespoon of butter until the butter is melted and corn is evenly coated.
  5. Sprinkle the crumbled feta cheese over the corn.
  6. Garnish with freshly chopped coriander.
  7. Serve immediately while still warm.

 

Note: You can add a pinch of smoked paprika for extra smoky flavor if desired.
