Refreshing Yuzu Soba

Ingredients

1 packet of Soba noodles, boiled

Quick Soba Broth

2 Cups Water
1 part Tsuyu (instant soba dipping broth)
2cm of Leek or whites of Spring onion, thinly sliced
1-2 tablespoon of Yuzu Kosho Butter
Optional Smoked Duck breast, sliced

Method

  1. In a pot, combine water and tsuyu and bring to a boil. Reduce heat, add leeks and simmer for 2 mins. Taste and adjust accordingly. Set aside to cool until warm. 
  2. Transfer the warm broth into a bowl and add a dollop of the Yuzu Kosho Butter into the soup and stir to combine. 
  3. Add the noodles into the bowl and garnish with the duck breast and additional leeks. Serve.
