Smoky Chipotle Chicken Fiesta Tacos

Ingredients

For the taco filling

    - 1 tablespoon Charred Tomato Chipotle Butter
    - 40g grilled chicken, sliced (or use fried mushrooms as a vegetarian option)
    - 2 soft tortilla wrap

    For the garnish

      - 1 medium tomato, diced
      - 1/4 small red onion, thinly sliced
      - 1/4 cup guacamole
      - 2 tablespoons crumbled feta cheese
      - Fresh cilantro leaves (optional)
      - Lime wedges for serving

      Method

        1. If using chicken, grill and slice it cubes. If using mushrooms, fry them until crispy (you can use the recipe for Crispy Chipotle Butter Mushroom Bites).
        2. In a small pan, melt the Charred Tomato Chipotle Butter over medium heat.
        3. Add the shredded chicken or fried mushrooms to the pan with the melted butter. Toss gently to coat and heat through, about 2-3 minutes.
        4. Warm the taco tortilla wrap according to package instructions.
        5. To assemble the tacos, divide the chicken or mushroom mixture between the two taco shells.
        6. Top each taco with diced tomatoes, sliced onions, a dollop of guacamole, and a sprinkle of crumbled feta cheese.
        7. If desired, garnish with fresh cilantro leaves.
        8. Serve immediately with lime wedges on the side for squeezing over the tacos.

        Notes

        - To make this dish vegetarian, use the fried mushroom option.
        - For added crunch, you can include some shredded lettuce or thinly sliced cabbage as an additional topping.
