Spicy Smashed Potatoes Recipe

Ingredients
5 baby potatoes
2 tbsp Meraki Mala Butter, softened
2 sprig of coriander, finely chopped
3 tbsp olive oil
1 tbsp chili flakes
Salt/Black Pepper to taste
Method
- Preheat oven to 180C.
- Bring a pot of water to boil, add potatoes and boil for 12-15 minutes till fork tender and soft. Alternatively, prick baby potatoes with a fork and microwave for 10mins flipping them halfway.
- Use a fork and smash the potato down as thin as possible while keeping it intact. Let them steam dry for 5mins for extra crispiness.
- Coat potatoes with olive oil, black pepper and salt. Roast in an oven for 20-30mins until crispy.
- Toss potatoes with butter, chili flakes and coriander.
