Truffle Garlic Pasta
Serves 1
Ingredients
100g Paccheri Pasta, or any tube pasta of your choice
150ml thickened/whipping cream
2 tbsp Summer Truffle Garlic Butter*, chilled
½ White onion, finely diced
Black pepper, to taste
Optional, 2 tsp white miso
Optional, 1 sprig thyme
Optional, Craft Truffles Black Truffle Salsa
Method
- Boil pasta according to package instructions. Strain and set aside.
- Heat a saucepan pan over medium heat and add 2 tbsp olive oil. Add onion and fry until translucent then mix in miso (if using) until combined.
- Add cream and thyme, simmer for 3-4 minutes until cream sauce is warm. Do not let the cream boil vigorously or it will turn lumpy. Remove from heat.
- Add in the Summer Truffle Garlic Butter and stir it into the cream so it slowly melts and emulsify into the sauce.
- Toss the pasta with the sauce until well combined. Serve with cracked black pepper, thyme and additional truffle salsa as garnish if you’d like.
*Summer Truffle Garlic Butter alternative: Kombu Butter.
