Yuzu Kosho Steamed Mussels
Ingredients
500g-700g Whole shell Mussels
2 garlic cloves, minced
1 small shallot, thinly sliced
¼ Lemon, juiced
½ cup Chicken broth, or any broth of your choosing
3 tablespoon of Yuzu Kosho Butter
1 tablespoon of neutral oil
Salt & Black pepper, to taste
Parsley, optional garnish
Method
- In a pot over med-low heat, add 1 tablespoon of neutral oil and stir fry the garlic and shallots until softened.
- Add in the mussels and broth, mix it in well. Cover the pot and cook over mid heat until the mussels have open, about 6-8 mins.
- Remove from heat, stir in the lemon juice, butter and parsley. Taste the broth and adjust accordingly with salt, pepper or butter. Serve hot.
