Yuzu Kosho Steamed Mussels

Ingredients

500g-700g Whole shell Mussels
2 garlic cloves, minced
1 small shallot, thinly sliced
¼ Lemon, juiced
½ cup Chicken broth, or any broth of your choosing
3 tablespoon of Yuzu Kosho Butter
1 tablespoon of neutral oil
Salt & Black pepper, to taste
Parsley, optional garnish

Method

  1. In a pot over med-low heat, add 1 tablespoon of neutral oil and stir fry the garlic and shallots until softened.
  2. Add in the mussels and broth, mix it in well. Cover the pot and cook over mid heat until the mussels have open, about 6-8 mins.
  3. Remove from heat, stir in the lemon juice, butter and parsley. Taste the broth and adjust accordingly with salt, pepper or butter. Serve hot.
